Camp Nachos

Nachos are easy and have a wide range of styles. You can make them for lunch, snacks, or dinner, and chilaquiles are perfect for any camp breakfast with a bit of twist.

Create at least two layers of corn chips, with your favorite ingredients, and a thin layer of cheese, saving some of the cheese for the final top layer. Cover with a lid or sheet of foil and place on hot coals or in the oven for 12-15 minutes. Add more cheese if desired. Top with crema, queso fresco, salsa, guacamole, chopped onions.

Chilaquiles with a bag of chips is a little different than making them with corn tortillas that are usually fired first. Chips tend to get a little soggy, so after years of creating chilaquiles in the campground, try this if using chips.

Place your favorite sauce in a bowl. Add ½ the bag of chips into the bowl with half of the chilaquiles sauce and mix thoroughly.  Save the remainder of the sauce for later.

Add the rest of the chips and give a quick mix so the colors blend. This way, the chips have a balance of soft and crunchy.
Add favorite ingredients to the chip bowl plus cheese.

Put chilaquiles into a heat-proof pan or foil container, pour the remainder of the sauce over the chips, and cover. Do not mix. Cover chips with a lid or sheet of foil.

Place on your camping heat source for 12-15 min. If in the camp oven, 350 degrees is recommended. While warming chilaquiles, make a batch of scrambled eggs or fire up a few fried eggs.

Take Chilaquiles out of the oven, mix in scrambled eggs, and serve with cheese, crema, queso fresco, and a garnish of cilantro and chopped onions. Don't forget the hot sauce. If using fired eggs, serve on the side so campers can add on their own. Top with cheese, crema, queso fresco, and a garnish of cilantro and chopped onions.

Chilaquiles Sauce can be homemade, a can of enchilada sauce, chili sauce, or tomato-based.

It can be spicy or mild.

Make a sauce with a can of enchilada sauce, onion powder, garlic powder, a pinch of salt, pepper, half a cup of water or chicken broth, and chopped cilantro.
